The Committee on College Culture of New Asia College organized a cultural talk titled “Sake Please!” on 20 May 2021 in Yun Chi Hsien, New Asia College. Mr. Yao CHIU, a Certified Sake Sommelier (Kikisake-shi, SSI Japan), Certified Shochu Sommelier (Shochu Kikisake-shi, SSI Japan), Certified Sake Quality Evaluation Expert (SSI Japan), was invited as the guest speaker.
Mr. Chiu first gave a brief introduction on the brewing process of sake and how yeast and rice koji are used to make traditional Japanese sake. He then answered some common questions on buying sake, such as the difference between Honjozo, Daiginjo and Junmai Sake, "Rice Polishing Rate" and the shelf life of sake after being open.
Finally, participants tasted three different types of sake brought by Mr. Chiu. Paired with different snacks such as apple crisps, meat jerky and smoked cheese, the unique aroma and flavors of different sake types were highlighted, making the tasting more enjoyable.
