You might have tried pomelo - a juicy and sweet-to-sour fruit! The flesh is such a great summertime treat. But after devouring it, what should we do with the white skin of the outer peel? Putting it into trash? Definitely not!

In Vietnam, we turn these bitter skins into an incredible pomelo sweet soup. As you can guess, the most challenging part is dealing with the bitterness. It takes us a little bit of time and patience, but it is worthwhile for such a beautifully aromatic soup.
